Chicken and mango salad with grilled chicken, mango
watercress and cucumber – curry spices are fattening

Chef Will Meyrick, who hails from London, visited Asia in h
to Australia in the late 1990s. His travels took him even further
culinary journey through hong kong, thailand and indonesia
exploring Asian cuisine from its origins. It was a profound experience
that turned what used to be "just a job" into a real
passion.
“I wasn't good at many other things. So I ended up cooking, 'Meyric

For the Balinese, spices (bumbu) are seen as a gift from God and the preparation of meals
always start with a visit to the market for fragrant roots like galangal, ginger,
garlic, saffron, small red and green peppers, raw palm sugar and terasi
(fermented fish paste.) Using a mortar and pestle, the spices are ground into a thick paste
which serves as a basis for tasty dishes. One of the most famous mixtures is basagede
used for spicy chicken, called Ayam Bumbu Bali. The amount of pepper
can be varied to taste.\AB
