Psyllium husks:In case you're not familiar with it, psyllium husk is more than just a funny name! It is aform of dietary fibermade from the bark of the medicinal plant,Plantage ovatathe seeds. It takes on the fluffing and binding properties that gluten does in traditional bread recipes.

Caution: it may turn your bread blueish purple! Avoid this by using Psyllium Husk for less oompa loompa bread NOW!

Baking Soda + Apple Cider Vinegar:With baking soda and an acid(the ACV in this case)collaborate,carbon dioxide is released, which causes the dough to expand and add some more fluff! May come!

  • Line an 8" loaf pan with parchment or parchment paper.

  • Combine dry ingredients in a large bowl.

  • Add eggs (6 large), melted butter (4 tbsp), *make sure it's cooled down, we don't want to cook the eggs*, apple cider vinegar (3 tbsp) and warm water (3/4 cup ) - stir to combine.

  • Pour the batter into the prepared loaf pan.

  • Psyllium husks.This recipe has been tested ONLY with NOW Psyllium Husk Powder. Some psyllium husk powders can turn baked goods a bluish-purple color and absorb liquids in varying amounts.
  • Nutritional information is based on 1 slice if you cut the bread into 16 slices.
  • It is important to use a FINE GRAIN almond flour,because the coarse grain will weigh down the eggs and make this bread less airy. I've been very lucky with Trader Joe's and Bob's Red Mill brand.
  • Not all psyllium husk powders produce the same amount of fuzz, and some can change the color of your bread to a bluish purple. I recommend using psyllium husk NOW.
  • You may need to cut the bread to see if it's done. If the center looks a little doughy, put it back in the oven. When the top starts to brown, place aluminum foil on top.
