Ingredient Notes

Here are the lean ingredients in this low carb sandwich bread recipe:

almond flour: Be sure to use fine-grained almond flour to make the fluffiest bread possible! I like the Trader Joe brand or Bob's Red Mill.

If you haven't tried almond flour bread yet, do yourself a favor and get started right away!

Psyllium husks:In case you're not familiar with it, psyllium husk is more than just a funny name! It is aform of dietary fibermade from the bark of the medicinal plant,Plantage ovatathe seeds. It takes on the fluffing and binding properties that gluten does in traditional bread recipes.

Caution: it may turn your bread blueish purple! Avoid this by using Psyllium Husk for less oompa loompa bread NOW!

Baking Soda + Apple Cider Vinegar:With baking soda and an acid(the ACV in this case)collaborate, carbon dioxide is released, which causes the dough to expand and add some more fluff! May come!

Eggs:Paleo bread can have a typically eggy taste, which bread doesn't mimic very well! I avoided that in this recipe by using less eggs and the cute magic ingredients above.(psyllium husk + ACV + baking soda!).

Also, be sure to use room temperature eggs or they will take longer to bake in the oven! And believe me, you won't want to wait for this bread!(The faster it's done, the faster you can eat it!)

Warm water: You want to use hot water versus cold water for the same reason you want room temperature eggs, SCIENCE!...cold water makes cooking take longer and can ruin the baking sodaEmyour bread's ability to fly to great heights!

tools to make

Here are the 3 things you need to make your own low carb sandwich bread recipe:

You will want to keep/refrigerate this keto sandwich bread recipe.

Also keep in mind that since this isn't your regular grocery store bread loaded with preservatives, it has a much shorter shelf life. But don't worry, the whole house will be eating it before it loses its freshness!

Can you freeze them?

Yes you can and I love that about this recipe! You can bake this, freeze half a loaf(or some pieces)and heat them up in the oven or toaster when you want to eat them! Super Simple Healthy Snacks!Low Carb Keto Sandwich Bread (2 g net carbs/slice!) - Little Pine Kitchen (3)

  • almond flour.Using fine-grained almond flour yields the most "forest" results. My favorite brands are Bob's Red Mill, Trader Joe's the Costco brands.
  • Psyllium husks. This recipe has been tested ONLY with NOW Psyllium Husk Powder. Some psyllium husk powders can turn baked goods a bluish-purple color and absorb liquids in varying amounts.
  • Nutritional information is based on 1 slice if you cut the bread into 16 slices.
  • It is important to use a FINE GRAIN almond flour, because the coarse grain will weigh down the eggs and make this bread less airy. I've been very lucky with Trader Joe's and Bob's Red Mill brand.
  • Not all psyllium husk powders produce the same amount of fuzz, and some can change the color of your bread to a bluish purple. I recommend using psyllium husk NOW.
  • You may need to cut the bread to see if it's done. If the center looks a little doughy, put it back in the oven. When the top starts to brown, place aluminum foil on top.
