The main ingredient is shirataki noodles. You need the following ingredients:

  • Shirataki-noedels -you can buy these "zero carb" keto noodles at most stores. They are known as miracle noodles, konjac noodles and shirataki noodles. There is also a huge variety available.Amazonas.
  • Egg white -I used diced chicken thighs in this recipe, but you can substitute almost any other protein. Shrimp, fish, chicken, lamb and beef are equally delicious.
  • Eggs -organic free-range eggs if possible.
  • green onion -fresh green onion is optional for garnish.
  • Pinda's -it wouldn't be pad thai without himpeanut sauce! Opt for unsalted roasted peanuts or roast them yourself. Place them in the oven at 350 degrees Fahrenheit (200 degrees Celsius) for 15 to 20 minutes.
  • garlic -fresh garlic cloves or minced garlic work well.
  • fish sauce -fishy and salty, it is an important ingredient in Thai cuisine.
  • Sweetener -In this recipe, I used erythritol, but other sugar-free sweeteners (like stevia or raspberry) will also work.
  • Red pepper flakes -chili flakes or red pepper to give your pad thai a kick! Completely optional.
  • lemon juice -fresh or bottled lemon juice is fine.
  • Sesame oil -it adds a wonderfully rich, nutty flavor to pad thai.

Is Pad Thai Keto?

Yes! Traditional Pad Thai is made with dry, carbohydrate-rich rice noodles.

However, my recipe uses shirataki or konjac noodles which containZERO net carbs. They arevery low in calories,under 20 per serving. Great for weight loss!

My keto pad thai sauce is made with a simple combination of erythritol, fish sauce, and red pepper flakes. No added sugars for less carbs and calories!

How to do this

  • Bring a pan of water to a boiland cook the shirataki noodles for 2 minutes. Remove pasta from pan and drain excess water.
  • in a frying panover medium heat, add a tablespoon of sesame oil.
  • Sauté the noodles2 to 3 minutes until lightly crispy and golden, then remove noodles and set aside.
  • In the same pan,add the remaining sesame oil and fry the chicken for 3 to 4 minutes.
  • Add peanuts and garlicinto the pan and cook for another minute. Save some of the peanuts for garnish, if desired.
  • pour the eggsstir continuously until cooked through.
  • mix the noodlesand season with the fish sauce, red pepper flakes, and erythritol.
  • portion of pad thaion plates, drizzle with lemon juice and garnish with chives and peanuts. To like!

storage instructions

Leftovers can be stored in an airtight container in the refrigerator. They can be kept for a maximum of 3 days. I don't recommend freezing because the ingredients don't freeze well.

  • 14 ons Shirataki-noedels
  • 7 ons Kip cut into pieces
  • 2 Eggs beaten
  • 3 chives finely chopped
  • ¼ Cup Pinda's unsalted, toasted
  • 2 garlic clove Garlic minced meat
  • 1 ½ soup spoon fish sauce
  • 1 soup spoon Erythritol
  • ¼ teaspoon red pepper flakes
  • 3 soup spoon Lemon juice
  • 3 soup spoon Sesame oil

Instructions

  • Bring a pot of water to a boil and cook the pasta for 2 minutes. Remove from the pan and drain the water.

  • Heat a tablespoon of sesame oil in a pan over medium heat and fry the noodles for 2-3 minutes until lightly crispy and golden brown. Put it aside.

  • In the same frying pan, heat the remaining sesame oil and fry the chicken for 3-4 minutes. Add the peanuts (reserve some for garnish) and garlic to the pan and cook for another minute. Pour in the eggs, stirring constantly, until firm.

  • Toss the noodles and season with the fish sauce, red pepper flakes, and erythritol.
